- 1 frying chicken, cut up or 2 chicken breasts
- 1/2 cup [70 g] flour
- 1/4 teaspoon [1 mL] pepper
- 1 teaspoon [5 mL] salt
- 1/2 cup [115 g] shortening or oil [125 mL]
- 2 tablespoons [17.5 g] flour [optional]
- Milk

- Mix together 1/2 cup [70 g] flour, salt and pepper.
- Melt shortening in a shallow baking dish.
- Roll chicken in flour mixture; arrange in baking dish.
- Bake into 325°F [160°C] oven for 30 minutes.
- Turn chicken and cook 30 minutes more.
- If desired, make gravy from drippings in pan; add remaining flour and blend well.
- Add some milk and cook, stirring, until thick.
