Oven Fried Chicken

  • 1 frying chicken, cut up or 2 chicken breasts
  • 1/2 cup [70 g] flour
  • 1/4 teaspoon [1 mL] pepper
  • 1 teaspoon [5 mL] salt
  • 1/2 cup [115 g] shortening or oil [125 mL]
  • 2 tablespoons [17.5 g] flour [optional]
  • Milk
  • Mix together 1/2 cup [70 g] flour, salt and pepper.
  • Melt shortening in a shallow baking dish.
  • Roll chicken in flour mixture; arrange in baking dish.
  • Bake into 325°F [160°C] oven for 30 minutes.
  • Turn chicken and cook 30 minutes more.
  • If desired, make gravy from drippings in pan; add remaining flour and blend well.
  • Add some milk and cook, stirring, until thick.
