Lemon Bars

Part 1
  • 1/2 cup [115 g] butter
  • 1 cup [140 g] flour
  • 1/4 cup [60 mL] icing sugar
Part 2
  • 1 cup [200 g] sugar
  • 2 tablespoons [17.5 g] flour
  • 1/2 teaspoon [2.5 mL] baking powder
  • 2 eggs, beaten
  • 2 tablespoons [30 mL] lemon juice
  • Grated rind of 1 lemon
Frosting
  • Lemon juice
  • Icing sugar
  • Mix together all 'Part 1' ingredients.
  • Preheat oven to 350°F [180°C].
  • Bake in an 8-inch [20-cm] square pan for 15 minutes.
  • Sift together 'Part 2 ' sugar, flour and baking powder.
  • Add beaten eggs, lemon juice and grated rind.
  • Spread on baked crust and bake at 350°F [180°C] for 25 minutes.
  • Mix together frosting lemon juice and icing sugar.
  • Frost bars with mixture.
