Sour Cream Apple Pie

  • 2 eggs
  • 8 ounces [227 g] sour cream
  • 1 cup [250 mL] sour cream
  • 6 tablespoons [52.5 g] all-purpose flour, divided
  • 1 teaspoon [5 mL] vanilla
  • 3 cups [750 mL] chopped peeled cooking apples
  • 1 [9-inch / 23-cm] unbaked pie shell
  • 3 tablespoons [45 g] butter
  • 1/4 cup [60 mL] brown sugar
  • In a large bowl, beat eggs.
  • Add sour cream.
  • Stir in sugar, 2 tablespoons [17.5 g] flour, vanilla and salt; mix well.
  • Stir in apples.
  • Pour into pie shell.
  • Bake at 375°F [190°C] for 15 minutes.
  • Meanwhile, combine butter, brown sugar and remaining flour.
  • Sprinkle over top of pie.
  • Return to oven for 20 to 25 minutes or until filling is set.
  • Cool completely on a wire rack.
  • Serve or cover and refrigerate.
