- 1/2 stick unsalted butter, melted
- 1 cup [200 g] sugar
- 1 1/2 cups [375 mL] buttermilk
- 4 large egg yolks
- 1 teaspoon [5 mL] vanilla
- 1 1/2 teaspoons [7.5 mL] grated lemon zest
- 1/4 teaspoon [1 mL] salt
- Freshly grated nutmeg, to taste
- 1 pie shell

- Preheat oven to 350°F [180°C].
- In a bowl, whisk together the butter, sugar, buttermilk, egg yolks, flour, vanilla, zest, salt and nutmeg.
- Pour filling into the pie shell.
- Bake the pie in the lower third of the oven for 20 minutes.
- Reduce oven to 325°F [160°C] and bake the pie for 20 to 25 minutes more, until the filling is set and golden.
