Lemon Buttermilk Pie

Comments: Serve the pie at room temperature or cool.
  • 1/2 stick unsalted butter, melted
  • 1 cup [200 g] sugar
  • 1 1/2 cups [375 mL] buttermilk
  • 4 large egg yolks
  • 1 teaspoon [5 mL] vanilla
  • 1 1/2 teaspoons [7.5 mL] grated lemon zest
  • 1/4 teaspoon [1 mL] salt
  • Freshly grated nutmeg, to taste
  • 1 pie shell
  • Preheat oven to 350°F [180°C].
  • In a bowl, whisk together the butter, sugar, buttermilk, egg yolks, flour, vanilla, zest, salt and nutmeg.
  • Pour filling into the pie shell.
  • Bake the pie in the lower third of the oven for 20 minutes.
  • Reduce oven to 325°F [160°C] and bake the pie for 20 to 25 minutes more, until the filling is set and golden.
