Cheesecake

Crust
  • 1 1/2 cups [375 mL] graham cracker curmbs
  • 1/4 pound [113 g] butter
  • 1/2 cup [100 g] sugar
  • Dash cinnamon
Filling
  • 4 eggs
  • 1 cup [200 g] sugar
  • 1 teaspoon [5 mL] vanilla
  • 3 [8-ounce / 227-g each] packages of cream cheese
Topping
  • 2 cups [500 mL] sour creeam
  • 2 tablespoons [30 g] sugar
  • 1/2 teaspoon [2.5 mL] vanilla
  • Preheat oven to 375°F [190°C].
  • Mix together all crust ingredients and pat into the bottom of a springform pan.
  • With a mixer, blend together all filling ingredients.
  • Mix together all topping ingredients.
  • Pour filling into crust.
  • Bake in preheated oven for 20 minutes; cool for 15 minutes.
  • Meanwhile higher oven temperature to 475°F [246°C].
  • Spread topping over cooled cake.
  • Bake for 5 minutes at 475°F [246°C].
  • Cool completely and then, refrigerate.
