Crust
- 1 1/2 cups [375 mL] graham cracker curmbs
- 1/4 pound [113 g] butter
- 1/2 cup [100 g] sugar
- Dash cinnamon
Filling
- 4 eggs
- 1 cup [200 g] sugar
- 1 teaspoon [5 mL] vanilla
- 3 [8-ounce / 227-g each] packages of cream cheese
Topping
- 2 cups [500 mL] sour creeam
- 2 tablespoons [30 g] sugar
- 1/2 teaspoon [2.5 mL] vanilla

- Preheat oven to 375°F [190°C].
- Mix together all crust ingredients and pat into the bottom of a springform pan.
- With a mixer, blend together all filling ingredients.
- Mix together all topping ingredients.
- Pour filling into crust.
- Bake in preheated oven for 20 minutes; cool for 15 minutes.
- Meanwhile higher oven temperature to 475°F [246°C].
- Spread topping over cooled cake.
- Bake for 5 minutes at 475°F [246°C].
- Cool completely and then, refrigerate.
