Spaghetti Pie

  • 6 ounces [170 g] pasta [spaghetti]
  • 2 eggs, beaten
  • 1/4 cup [60 g] Parmesan cheese
  • 2 tablespoons [30 g] butter
  • 1/3 cup [80 mL] chopped onion
  • 1 cup [250 mL] sour cream
  • 1 pound [454 g] hamburger or Italian sausage
  • 1 [6-ounce / 170-mL] can tomato paste
    +
    1 cup [250 mL] water
    or
    any spaghetti sauce
  • Mozzarella cheese
  • Break spaghetti in half.
  • Cook until done; drain.
  • While still warm, combine spaghetti with eggs and Parmesan cheese.
  • Pour into a well greased 10-inch [25-cm] pie plate, pat mixture up and around sides with a spoon.
  • Melt butter, add onion and saute until limp.
  • Stir in sour cream and spoon over spaghetti.
  • Brown meat; add tomato paste mixed with water or spaghetti sauce and simmer for 10 minutes.
  • Spoon meat on top of sour cream mixture.
  • Bake at 350°F [180°C] for 25 minutes.
  • Arrange Mozzarella cheese on top; return to oven until cheese melts.
