- 2 pounds [1 kg] large cherries, pitted
- 1 1/2 cups [375 mL] sugar
- 2 1/2 cups [625 mL] red wine [full bodied]
- 1 1/4 cups [310 mL] whipped cream, sweetened

- Put the cherries in a pan.
- Add the sugar and wine.
- Bring slowly to a boil and simmer until soft, about 15 minutes.
- Leave to cool in juices.
- Spoon fruit into individual dishes.
- Top with sweetened whipped cream.
