Cherries in Wine

  • 2 pounds [1 kg] large cherries, pitted
  • 1 1/2 cups [375 mL] sugar
  • 2 1/2 cups [625 mL] red wine [full bodied]
  • 1 1/4 cups [310 mL] whipped cream, sweetened
  • Put the cherries in a pan.
  • Add the sugar and wine.
  • Bring slowly to a boil and simmer until soft, about 15 minutes.
  • Leave to cool in juices.
  • Spoon fruit into individual dishes.
  • Top with sweetened whipped cream.
