Brandied Seed Cake

Comments: For Christmas, try and put a ring or green and red maraschino cherries around the top.
  • 2 packages [1 pound / 454 g] pound cake mix
  • 1 teaspoon [5 mL] nutmeg
  • 1 cup [250 mL] milk
  • 4 eggs
  • 2 tablespoons [30 mL] caraway seeds
  • 1/2 cup [125 mL] Brandy
  • Preheat oven to 325°F [160°C].
  • Place cake mix in bowl, sprinkle in nutmeg and mix well.
  • Add milk.
  • Stir until mixture is moistened.
  • Beat about 1 minute at medium speed.
  • Add eggs; stir in and beat about 1 minute.
  • Add seeds and brandy; mix.
  • Pour into a well greased bunt pan.
  • Bake for 1 hour or until a toothpick comes out clean.
  • Ice with thin icing sugar frosting.
