Beef in Aspic

IngredientsPreparation
  • 5 cups [1.25 L] beef consommé
  • 1 pound [454 g] roasted or boiled beef
  • 1 cup [250 ml] water
  • 6 tablespoons [90 ml] unflavored gelatine
  • 4 celery stalks, chopped
  • 1 carrot
  • 2 onions, chopped
  • 1 green pepper, chopped
  • 2 tablespoons [30 ml] cider vinegar
  • Lemon juice
  • 4 teaspoons [20 ml] salt
  • 1/2 teaspoon [2.5 ml] Cayenne pepper
  • 1/4 teaspoon [1 ml] Tabasco sauce
  • 1 1/2 teaspoons [7.5 ml] Worcestershire sauce
  • To consommé, add all ingredients except meat and gelatine.
  • Bring to boil; simmer, uncovered, for 10 minutes.
  • Strain and reserve.
  • Dissolve gelatine in 1 cup [250 ml] cold water; add to consommé.
  • Heat until melted.
  • Fray meatand mix it with consommé.
  • Pour into a loaf pan and refrigerate for approximately 4 hours or until firm.
