- 5 cups [1.25 L] beef consommé
- 1 pound [454 g] roasted or boiled beef
- 1 cup [250 ml] water
- 6 tablespoons [90 ml] unflavored gelatine
- 4 celery stalks, chopped
- 1 carrot
- 2 onions, chopped
- 1 green pepper, chopped
- 2 tablespoons [30 ml] cider vinegar
- Lemon juice
- 4 teaspoons [20 ml] salt
- 1/2 teaspoon [2.5 ml] Cayenne pepper
- 1/4 teaspoon [1 ml] Tabasco sauce
- 1 1/2 teaspoons [7.5 ml] Worcestershire sauce

- To consommé, add all ingredients except meat and gelatine.
- Bring to boil; simmer, uncovered, for 10 minutes.
- Strain and reserve.
- Dissolve gelatine in 1 cup [250 ml] cold water; add to consommé.
- Heat until melted.
- Fray meatand mix it with consommé.
- Pour into a loaf pan and refrigerate for approximately 4 hours or until firm.
