Cheese Sauce
- 1 tablespoon [8.75 g] flour
- 1/2 cup [125 mL] milk
- 1/2 cup [125 mL] cream
- 1/4 pound [113 g] grated Old Cheddar cheese

- Into a saucepan, cover eggs with cold water.
- Bring to boil over medium heat.
- Lower heat; simmer for 15 minutes.
- Cool eggs in cold water for a few minutes; peel then half eggs lengthwise.
- Prepare cheese sauce.
- Into a serving dish, arrange 1 row egg halves, cut side on top; lightly salt then pour half of cheese sauce.
- Repeat rows with remaining egg halves and sauce.
- Serve immediately.
Cheese Sauce
- Into a saucepan, using a metal whip, beat together flour, milk and cream.
- Heat, stirring.
- Slowly stir in grated cheese, stirring until cheese has melted and mixture has thickened.
