Hard-Boiled Eggs with Cheese Sauce

  • 6 eggs
  • Cold water
Cheese Sauce
  • 1 tablespoon [8.75 g] flour
  • 1/2 cup [125 mL] milk
  • 1/2 cup [125 mL] cream
  • 1/4 pound [113 g] grated Old Cheddar cheese
  • Into a saucepan, cover eggs with cold water.
  • Bring to boil over medium heat.
  • Lower heat; simmer for 15 minutes.
  • Cool eggs in cold water for a few minutes; peel then half eggs lengthwise.
  • Prepare cheese sauce.
  • Into a serving dish, arrange 1 row egg halves, cut side on top; lightly salt then pour half of cheese sauce.
  • Repeat rows with remaining egg halves and sauce.
  • Serve immediately.
Cheese Sauce
  • Into a saucepan, using a metal whip, beat together flour, milk and cream.
  • Heat, stirring.
  • Slowly stir in grated cheese, stirring until cheese has melted and mixture has thickened.
