Cajun Rice
Comments: Do not use instant cooking rice.

  • 1 1/2 cups [375 ml] uncooked rice
  • 8 tablespoons [120 ml] butter
  • 3 cups [375 ml] beef consomme or chicken broth
  • 1 large onion, sliced
  • 1/4 teaspoon [1 ml] thyme
  • 1/4 teaspoon [1 ml] marjoram
  • 1/4 teaspoon [1 ml] rosemary
  • In a frypan, brown rice in melted butter.
  • Pour rice into an oven-proof cassserole; mix in beef consomme or chicken broth, onion, thyme, marjoram and rosemary.
  • Bake in a 350°F [180°C] oven, covered, for 30 minutes.
  • Uncover, stir and bake for 30 minutes more, until liquid has been absorbed.
