Baked Yams
Comments: Yams are a variety of sweet potato.

IngredientsPreparation
  • 6 tablespoons [90 ml] butter
  • 6 larges yams, peeled and sliced
  • 2 lemons, thinly sliced
  • 1 cup [250 ml] sugar
  • 2 tablespoons [30 ml] lemon juice
  • In a frypan, heat butter until it starts to boil; brown some yam slices.
  • Remove slices immedately; arrange yam slices in a casserole, alternately with some lemon slices.
  • Repeat until all yam slices are browned.
  • Add sugar and lemon juice to frypan, scraping everything that sticks to the fry pan..
  • Simmer, stirring to get a syrup.
  • If syrup is too thick, add a litle water.
  • Pour over yams and bake in a 350°F [180°C] oven for 45 minutes.
