- 6 tablespoons [90 ml] butter
- 6 larges yams, peeled and sliced
- 2 lemons, thinly sliced
- 1 cup [250 ml] sugar
- 2 tablespoons [30 ml] lemon juice

- In a frypan, heat butter until it starts to boil; brown some yam slices.
- Remove slices immedately; arrange yam slices in a casserole, alternately with some lemon slices.
- Repeat until all yam slices are browned.
- Add sugar and lemon juice to frypan, scraping everything that sticks to the fry pan..
- Simmer, stirring to get a syrup.
- If syrup is too thick, add a litle water.
- Pour over yams and bake in a 350°F [180°C] oven for 45 minutes.
