- 2 small firm eggplants
- Olive oil, melted butted or bacon fat
- Salt and pepper

- Peel eggplants; slice 1/2 inch [1.3 cm] thick.
- Arrange slices on a baking sheet; salt, pepper and brush with oil.
- Broil in oven for 5 minutes, approximately 2 1/2 inches [6.3 cm] from heat.
- Turn slices and broil for 5 minutes more.
- Serve immediately.
