Broiled Eggplant

  • 2 small firm eggplants
  • Olive oil, melted butted or bacon fat
  • Salt and pepper
  • Peel eggplants; slice 1/2 inch [1.3 cm] thick.
  • Arrange slices on a baking sheet; salt, pepper and brush with oil.
  • Broil in oven for 5 minutes, approximately 2 1/2 inches [6.3 cm] from heat.
  • Turn slices and broil for 5 minutes more.
  • Serve immediately.
