- 2 pounds [1 kg] fresh broccoli
- 3 cups [750 ml] bread crumbs
- 2 beaten eggs
- 2 tablespoons [30 ml] water
- Salt and peper, to taste

- Cut broccoli pieces, lengthwise.
- Do not remove stem.
- In a large casserole, cover with salted water.
- Bring to boil over low heat; boil rapidly for 5 minutes.
- Delicately remove broccoli from water; drain and cool under cold running water.
- Beat together egg, water, salt and pepper.
- Dip broccoli pieces into egg mixture, then into bread crumbs until well coated.
- Heat 1 inch [2.5 cm] oil to 390°F [198°C] in a heavy saucepan.
- With a slotted spoon, slowly lower broccoli pieces in hot oil; fry until golden brown.
- Drain on paper towels.
