Fried Broccoli

  • 2 pounds [1 kg] fresh broccoli
  • 3 cups [750 ml] bread crumbs
  • 2 beaten eggs
  • 2 tablespoons [30 ml] water
  • Salt and peper, to taste
  • Oil
  • Cut broccoli pieces, lengthwise.
  • Do not remove stem.
  • In a large casserole, cover with salted water.
  • Bring to boil over low heat; boil rapidly for 5 minutes.
  • Delicately remove broccoli from water; drain and cool under cold running water.
  • Beat together egg, water, salt and pepper.
  • Dip broccoli pieces into egg mixture, then into bread crumbs until well coated.
  • Heat 1 inch [2.5 cm] oil to 390°F [198°C] in a heavy saucepan.
  • With a slotted spoon, slowly lower broccoli pieces in hot oil; fry until golden brown.
  • Drain on paper towels.
