Green Bean Salad

  • 1 1/2 pounds [680 g] fresh green beans
  • 16 cups [4 L] water, salted to taste
  • Sour cream sauce
  • Croutons
Sour Cream Sauce
  • 1 cup [250 ml] sour cream
  • 1 teaspoon [5 ml] grated onion
  • 1 teaspoon [5 ml] celery seeds
  • 1/2 teaspoon [2.5 ml] salt
  • 1/2 teaspoon [2.5 ml] sugar
  • 1/4 teaspoon [1 ml] white pepper
  • 1 teaspoon [5 ml] vinegar or lemon juice
  • Rinse, remove threads, cut ends, and separate benas lengthwise; put in a strainer.
  • In a large casserole, bring water to boil; lower strainer in boiling water and cook beans for 5 minutes.
  • Drain and cool beans under cold running water.
  • Refrigerate.
  • Serve cold mixed with sour cream sauce, sprinkled with croutons.
Sour Cream Sauce
  • Whip sour cream.
  • Add onion, celery seeds, salt, sugar, white pepper and vinegar or lemon juice.
  • Mix well.
