- 1 1/2 pounds [680 g] fresh green beans
- 16 cups [4 L] water, salted to taste

Sour Cream Sauce
- 1 cup [250 ml] sour cream
- 1 teaspoon [5 ml] grated onion
- 1 teaspoon [5 ml] celery seeds
- 1/2 teaspoon [2.5 ml] salt
- 1/2 teaspoon [2.5 ml] sugar
- 1/4 teaspoon [1 ml] white pepper
- 1 teaspoon [5 ml] vinegar or lemon juice

- Rinse, remove threads, cut ends, and separate benas lengthwise; put in a strainer.
- In a large casserole, bring water to boil; lower strainer in boiling water and cook beans for 5 minutes.
- Drain and cool beans under cold running water.
- Refrigerate.
- Serve cold mixed with sour cream sauce, sprinkled with croutons.
Sour Cream Sauce
- Whip sour cream.
- Add onion, celery seeds, salt, sugar, white pepper and vinegar or lemon juice.
- Mix well.
