- 3 small cucumbers
- 2 teaspoons [10 ml] salt
- 5 green onions, finely minced
- Salt and pepper, to taste
- 1/2 cup [125 ml] thick cream
- 1 Boston lettuce head

- Peel cucumbers; cut into strips or dice.
- In a bowl, mix cucumber pieces with salt.
- Let stand at room temperature for 1 hour.
- Meanwhile, mix together green onions, salt, pepper and cream.
- Drain and dry cucumber.
- Just before serving, shred lettuce.
- Add cucumber and cream mixture.
- Mix well.
