Molasses Pie
Servings: 1 [9-inch / 23 cm] pie

  • 3 eggs
  • 2 tablespoons [30 ml] all-purpose flour
  • 1/4 cup [60 ml] soft butter
  • 1/2 cup [125 ml] sugar
  • 1/2 teaspoon [2.5 ml] allspice
  • 1/8 teaspoon [0.5 ml] nutmeg
  • 1 teaspoon [5 ml] baking soda
  • 1/4 teaspoon [1.25 ml] salt
  • 3/4 cup [190 ml] dark molasses
  • 1 [9-inch / 23cm] unbaked pie shell
  • Whipped cream
  • Lightly beat eggs, add flour, soft but not melted butter, sugar, allspice, nutmeg and salt.
  • Mis well.
  • In a saucepan, over medium heat, bring molasses to a boil; add baking soda.
  • Cook, stirring, until there is no more foam.
  • Cool; add egg mixture.
  • Mix well.
  • Pour into pie shell.
  • Cook for approximately 30 minutes in a 300°F [150°C] oven.
  • Cool completely.
  • Cover with whipped cream.
