Jelly Roll

  • 3 beaten eggs
  • 1 cup [250 ml] sugar
  • 5 tablespoons [75 ml] water
  • 1 teaspoon [5 ml] vanilla
  • 1 cup [250 ml] flour
  • 1 teaspoon [5 ml] baking powder
  • 1/4 teaspoon [1] salt
  • 16 ounces [500 ml] strawberry jelly
  • Icing sugar
  • Gradually add, beating, sugar water and vanilla to beaten eggs.
  • Sift together flour, baking powder and salt; add to egg mixture.
  • Beat until smooth.
  • Grease and flour a 15 1/2 x 10 1/2 inches [39 x 26 cm] roll pan; pour in dough.
  • Bake in a 375°F [190°C] oven for approximately 12 to 15 minutes, until done.
  • Loosen sides and immediately turn upside-down on a cloth, covered with sifted icing sugar.
  • Garnish with strawberry jelly; roll cake starting from a narrow end.
  • Wrap roll in a towel; cool.
  • Unwrap and slice.
