Doughnut Squares
Servings: Approximately 24 squares

  • 1 cup [250 ml] boiling milk
  • 2 tablespoons [30 ml] oil
  • 2 tablespons [30 ml] sugar
  • 1 envelop yeast [1 tablespoon / 15 ml]
  • 3 cups [750 ml] all-purpose flour
  • 1 teaspoon [5 ml] salt
  • 1/2 teaspoon [2.5 ml] nutmeg
  • 1/2 teaspoon [2.5 ml] cinnamon
  • 1 beaten egg
  • Frying oil
  • Icing sugar
  • In a large bowl, pour milk, oil and sugar.
  • Mix well and cool to 10°F [-12°C].
  • Add yeast; stir to dissove.
  • Sift together flour, salt, nutmeg and cinnamon; add half to yeast mixture.
  • Mix in beaten egg and remaining flour mixture.
  • Shape into a large ball.
  • Cover and let rise until doubled.
  • Flatten dough with your fist; knead until elasticity.
  • On a floured rolling board, roll dough until 1/3 inch [8 mm] thick.
  • Cut into 2-inch [5 cm] squares.
  • Cover; let rise for 45 minutes.
  • Pour 3 inches [8 cm] oil in a deep-fryer; heat until 375°F [190°C].
  • Add dough squares and fry until golden brown; turn and fry on other side.
  • With a slotted spoon, transfer squares to paper towels to drain.
  • Sprinkle generously with icing sugar.
  • Serve hot.
