Louisiana-Style Pecan Waffles
Servings: 12 small or 6 large waffles

  • 3 large eggs, whites and yolks separated
  • 1 1/2 cups [375 ml] milk
  • 2 cups [500 ml] sifted flour
  • 4 teaspoons [20 ml] baking powder
  • 1 tablespoon [15 ml] sugar
  • 1/2 teaspoon [2.5 ml] salt
  • 4 tablespoons [60 ml] melted butter
  • 1 cup [250 ml] chopped pecans
  • Beat egg yolks with milk.
  • Sift together flour, baking powder, sugar and salt; add to egg yolks/milk mixture.
  • Beat until smooth.
  • Add melted butter; beat.
  • Beat egg whites until stiff peaks form; add pecans.
  • Add to dough.
  • Heat a waffle iron; pour enough dough to cook one, desired sized, waffle.
  • Cook until steam stops coming out from the waffle iron and waffle is golden brown.
