Banana Fritters

  • 1 cup [250 ml] sifted flour
  • 1 teaspoon [5 ml] sugar
  • 2 teaspoons [10 ml] baking powder
  • Pinch of salt
  • 1 large egg
  • 1/4 cup [60 ml] milk
  • 1 teaspoon [5 ml] vanilla extract
  • 2 large well ripe bananas, mashed
  • Oil
  • Icing sugar
  • Mix together flour, sugar, baking powder and salt in a mixing bowl.
  • Beat egg with milk and vanilla.
  • Add to flour mixture, mixing well.
  • Add bananas; mix well.
  • Pour 1 inch [2.5cm] oil in a heavy bottom saucepan.
  • Heat oil to approximately 375°F [190°C].
  • Drop spoonfuls of batter into hot oil.
  • Fry until fritters are golden brown, turning to brown evenly.
  • Drain on paper towels.
  • Sprinkle with icing sugar.
