- 1 cup [250 ml] sifted flour
- 1 teaspoon [5 ml] sugar
- 2 teaspoons [10 ml] baking powder
- Pinch of salt
- 1 large egg
- 1/4 cup [60 ml] milk
- 1 teaspoon [5 ml] vanilla extract
- 2 large well ripe bananas, mashed
- Oil
- Icing sugar

- Mix together flour, sugar, baking powder and salt in a mixing bowl.
- Beat egg with milk and vanilla.
- Add to flour mixture, mixing well.
- Add bananas; mix well.
- Pour 1 inch [2.5cm] oil in a heavy bottom saucepan.
- Heat oil to approximately 375°F [190°C].
- Drop spoonfuls of batter into hot oil.
- Fry until fritters are golden brown, turning to brown evenly.
- Drain on paper towels.
- Sprinkle with icing sugar.
