Fig Chutney Louisiana Style
Comments: Older, a little too ripe figs can be used.
Servings: 1 [2-cup / 500 ml] jar
IngredientsPreparation
  • 4 cups [1 L] whole fresh washed figs
  • 1/3 cup [80 ml] sugar
  • 1/3 cup [80 ml] water
  • 1/4 teaspoon [1 ml] ginger
  • 1/4 teaspoon [1 ml] allspice
  • 1/4 teaspoon [1 ml] cinnamon
  • 1/4 teaspoon [1 ml] ground clove
  • 1 lemon cut into tiny pieces
  • In a large casserole, mix together figs, sugar water, ginger, allspice, cinnamon, ground clove and lemon pieces.
  • Bring to boil, over medium heat, stirring often.
  • Lower heat; cook for 5 minutes, until mixture resembles a brown, thick syrup.
  • Cool.
  • Keep in bowls, refrigerated or freeze.
