Hot Pepper Jelly
Servings: About 5 [8 ounce / 250 ml] jars
  • 1/4 cup [60 ml] red hot pepper, seeded and minced
  • 3/4 cup [190 ml] green bell pepper, seeded and minced
  • 1 1/2 cups [375 ml] cider vinegar
  • 6 1/2 cups [1.625 L] sugar
  • 1 [6 ounce / 190 ml] bottle fruit pectin
  • Green food coloring
  • 5 [8 ounce / 250 ml] sterilized jars
  • In a large casserole, mix well red and green peppers, cider vinegar and sugar.
  • Bring to boil; boil for 10 minutes.
  • Add fruit pectine; boil for 1 minute more.
  • Add food coloring.
  • Lightly cool; pour into jars.
  • To seal, turn jars upside-down.
