Po-Boys
Comments: Po-Boy is an abbreviation for 'Poor Boy'.
This sandwich, at the time sold for a very reasonable price, was made with a variety of fillings.
To serve shimp 'Poor Boys', just use 36 medium-size fresh, shelled and deveined shrimps instead of oysters.
To fry shrimps: beat 1 egg with salt, pepper and 1 tablespoon [15 ml] water.
Soak shrimps in beaten egg mixture; dip in bread crumbs.
Fry and use in the same way as oysters.
Cold leftover roast beef can also be used.

  • 36 large oysters
  • Corn flour
  • Salt and pepper
  • 1 large loaf Fench bread [approximately 36 inches / 90 cm long]
  • Oil
  • Lettuce
  • Tomato slices
  • Mayonnaise
  • Catsup
  • Drain oysters for at least 30 minutes before using.
  • Roll in corn flour seasoned with salt and pepper.
  • Pour 3 inches [7.5 cm] oil in a large casserole; heat to 390°F [199°C].
  • Slowly dip in oysters; fry until golden brown.
  • Drain on paper towels; keep warm.
  • Slice bread lengthwise.
  • Arrange lettuce and tomato slices on one half.
  • Add oysters and cover with other half of bread.
  • Slice into equal parts.
  • Serve with mayonnaise or catsup.
