Po-Boy is an abbreviation for 'Poor Boy'. This sandwich, at the time sold for a very reasonable price, was made with a variety of fillings. To serve shimp 'Poor Boys', just use 36 medium-size fresh, shelled and deveined shrimps instead of oysters. To fry shrimps: beat 1 egg with salt, pepper and 1 tablespoon [15 ml] water. Soak shrimps in beaten egg mixture; dip in bread crumbs. Fry and use in the same way as oysters. Cold leftover roast beef can also be used. |
