- 12 medium-size potatoes
- Oil for frying
- Salt
- 2 deep-fry cooker, with wire baskets

- Peel and wash potatoes.
- Cut potatoes lengthwise in 1/8 inch [3 mm] slices; dry with a cloth.
- Using one wire basket, drop some potatoe pieces into preheated 365°F [185°C] oil.
- Let oil slowly reach back its temperature; cook potaotes until they com e on top of the oil, approximately 7 minutes.
- Drain in wire basket, then lower potatoes in the other cooker [oil preheated to 375°F [190°C].
- Potatoes should puff immediately.
- Dry potatoes on paper towels.
- Potatoes can now wait forevever...
- Just before serving, dip potatoes in hot oil, drain and dry once more on paper towels, for a few seconds.
- Salt to taste.
