- 3 large ripe plantains
- Peanut oil
- 1/2 cup [125 ml] sugar
- 2 cups [500 ml] hot water

- Peel plantains; cut in two and slice each half in 3 slices lengthwise, or slice into 1 1/2 inch [4 cm] thick slices.
- Pour approximately 1/2 inch [1.3 cm] oil in a frypan; heat oil and brown some plantain slices on both sides.
- Remove immediately to paper towels; repeat until all slices are browned.
- Add oil if needed.
- Put all slices back into frypan, sprinkle with sugar and pour hot water all over.
- Tightly cover, lower heat and cook for 15 minutes, until water is all absorbed.
