Chicken and Vegetables a la King

  • 6 patty shells [already baked or frozen]
  • 2 tablespoons [30 g] butter
  • 1 small onion, chopped
  • 1/4 cup [60 mL] chopped sweet red pepper, membranes removed and seeded
  • 1/2 cup [125 mL] zucchini slices
  • 1 can [10-ounce / 284-mL] cream of mushroom soup concentrate
  • 1/3 cup [80 mL] milk
  • 2 cups [500 mL] cooked chicken cubes
  • 1/2 teaspoon [2.5 mL] dried basil
  • 1/4 teaspoon [1 mL] pepper
  • Bake patty shells according to package directions.
  • Melt butter into a saucepan.
  • Cook together chopped onion and sweet red pepper along with zucchini slices until tender.
  • Blend in cream of mushroom soup concentrate, milk, cooked chicken cubes, basil and pepper.
  • Heat, stirring occasionally, until hot.
  • Evenly spoon mixture into hot patty shells, and serve.
