Holland-Style Apple Pie

  • 6 to 8 apples
  • 1 cup [250 mL] brown sugar
  • 1/2 cup [100 g] sugar
  • 1/2 teaspoon [2.5 mL] cinnamon
  • 3 tablespoons [26.25 g] all-purpose flour
  • 1 cup [250 mL] cream or sour cream
  • 2 [9-inch / 23-cm each] pie shells
  • Preheat oven to 450°F [230°C].
  • Rinse, peel and core apples; cut apples into segments.
  • Into a bowl, mix together half of brown sugar, sugar, cinnamon and flour.
  • Evenly spread mixture into one of pie shells.
  • Evenly arrange apple segments on top of mixture.
  • Into a bowl, mix together remaining brown sugar and cream or sour cream; pour all over apple segments.
  • Top with remaining pie shell; cut slits into dough.
  • Bake pie into preheated oven, for 10 minutes.
  • Lower oven temperature to 325°F [160°C].
  • Bake pie for approximately 45 minutes longer, until apple segments are tender.
