Old Virginia-Style Apple Pie
Comments: This delicious lemon tasting apple pie that produces its own juices, is delicious served along with cream or ice cream.
  • 1/2 lemon
  • 1 cup [250 mL] water
  • 3/4 cup [150 g] sugar
  • 2 tablespoons [17.5 g] flour
  • 1/4 teaspoon [1 mL] nutmeg
  • 3 cups [750 mL] peeled and cored apple slices
  • 2 tablespoons [30 g] butter
Dough
  • 1 cup [140 g] all-purpose flour
  • 1/2 teaspoon [2.5 mL] salt
  • 1/3 cup [75 g] shortening
  • 3 tablespoons [45 mL] cold water
  • Preheat oven to 400°F [200°C].
  • Thinly slice lemon half.
  • To soften rind, simmer lemon slices into boiling water.
  • Mix together sugar, flour and nutmeg; mix into lemon slices.
  • Cook until thick.
  • Delicately mix in apple slices and butter.
  • Transfer into a greased pie plate.
  • Prepare dough; roll dough until thin.
  • Cut dough into triangles.
  • Arrange dough triangles over apple mixture.
  • Bake into preheated oven, for approximately 40 minutes.
Dough
  • Mix together flour and salt.
  • Cut shortening into mixture.
  • Mix in cold water.
