Plantation Spoon Bread

  • 1 1/3 teaspoons [6.6 g] sugar
  • 1 1/2 teaspoons [7.5 mL] salt
  • 1 cup [250 mL] cornflour
  • 1 1/3 cups [330 mL] boiling water
  • 4 tablespoons [60 g] butter
  • 3 eggs
  • 1 tablespoon [15 mL] baking powder
  • 1 1/3 cups [330 mL] whole milk
  • Well mix together sugar, salt and cornflour.
  • Pour boiling water over mixture, stirring; melt in butter.
  • Leave to cool.
  • Preheat oven to 350°F [180°C].
  • Meanwhile, beat eggs until light.
  • Mix beaten eggs and baking powder into cooled mixture.
  • Stir in milk.
  • Pour into an 8-cup [2-L] buttered bread pan.
  • Arrange pan into a casserole filled with boiling water.
  • Bake into preheated oven, for approximately 35 minutes.
