Apricot Bread

  • 1/2 cup [125 mL] dried apricots
  • 1/2 cup [125 mL] raisins
  • Juice of 1 orange
  • 1 egg, beaten
  • 1 teaspoon [5 mL] vanilla
  • 2 tablespoons [30 g] softened butter
  • 2 cups [280 g] flour
  • 1 teaspoon [5 mL] baking soda
  • 1/2 cup [100 g] sugar
  • 1/2 teaspoon [2.5 mL] salt
  • 2 teaspoons [10 mL] baking powder
  • 1/2 cup [125 mL] chopped walnuts
  • Cold water
  • Just cover apricots and raisins with cold water; leave to soak for 30 minutes.
  • Preheat oven to 350°F [180°C].
  • Reserving soaking water, press swollen fruits through a sieve.
  • Measure orange juice and, if needed, pour in enough reserved soaking water to get 1 cup [250 mL] liquid.
  • Pour soaking water mixture into ground fruits.
  • Mix beaten egg and vanilla into softened butter; stir into fruits mixture.
  • Sift together flour, baking soda, sugar, salt and baking powder.
  • Fold dry ingredients and chopped walnuts into fruits mixture.
  • Pour into a bread pan.
  • Bake into preheated oven, for 1 hour.
  • Unmold; leave to cool completely, onto a wire rack.
