- 2 cups [500 mL] cornflour
- 2 teaspoons [10 mL] baking powder
- 1/2 teaspoon [2.5 mL] baking soda
- 1/2 teaspoon [2.5 mL] salt
- 1 teaspoon [5 g] sugar
- 2 cups [500 mL] buttermilk, or more if needed
- 2 eggs
- 1/4 cup [60 g] melted fat

- Preheat oven to 400°F [200°C].
- Sift together cornflour, baking powder, baking soda, salt and sugar.
- Add buttermilk, eggs and melted fat; beat using an rotary mixer.
- Preheat greased muffin tins; fill tins with dough.
- Bake into preheated oven, for approximately 25 minutes.
