Virginia-Style Cornflour Muffins

  • 2 cups [500 mL] cornflour
  • 2 teaspoons [10 mL] baking powder
  • 1/2 teaspoon [2.5 mL] baking soda
  • 1/2 teaspoon [2.5 mL] salt
  • 1 teaspoon [5 g] sugar
  • 2 cups [500 mL] buttermilk, or more if needed
  • 2 eggs
  • 1/4 cup [60 g] melted fat
  • Preheat oven to 400°F [200°C].
  • Sift together cornflour, baking powder, baking soda, salt and sugar.
  • Add buttermilk, eggs and melted fat; beat using an rotary mixer.
  • Preheat greased muffin tins; fill tins with dough.
  • Bake into preheated oven, for approximately 25 minutes.
