Virginia-Style Ham Muffins
  • 1 cup [140 g] flour
  • 3 teaspoons [15 mL] baking powder
  • Pinch of salt
  • 1/2 teaspoon [2.5 g] sugar
  • 3/4 cup [190 mL] ground Virginia ham
  • 2/3 cup [180 mL] milk
  • 1 egg, well beaten
  • 1 tablespoon [15 g] melted butter
  • Preheat oven to 400°F [200°C].
  • Sift together flour, baking powder, salt and sugar.
  • Mix in ground ham, well beaten egg and melted butter.
  • Drop a spoonful of dough into each greased muffin tin.
  • Bake into preheated oven, for 20 to 30 minutes.
