Virginia-Style Waffles
Comments: Serve these waffles as is, or along with a syrup.

  • 1 3/4 cups [245 g] flour
  • 3 leveled teaspoons [15 mL] baking powder
  • 1/8 teaspoon [0.5 mL] salt
  • 2/3 cup [160 mL] ground Virginia ham
  • 1 1/4 cups [310 mL] milk
  • 2 eggs, separated
  • 1 tablespoon [15 g] melted butter
  • Sift together flour, baking powder and salt.
  • Into a small bowl, beat egg yolks.
  • Beat ground ham, beaten egg yolks and melted butter into flour mixture.
  • Whip egg whites until firm; fold into mixture.
  • Bake dough into a waffle iron, until golden browned.
