Apple Stuffing for Pork
Servings: Enough to stuff a 6-pound [2.7-kg] shoulder of pork.

  • 1/4 pound [113 g] salt pork, diced
  • 1/4 cup [60 mL] chopped onion
  • 2 cups [500 mL] tart apple dices
  • 1/4 cup [60 mL] well-packed brown sugar
  • 2 cups [500 mL] freshly made breadcrumbs
  • Few grains of salt
  • Fry salt pork dices until crunchy.
  • Mix in and fry chopped onion.
  • Mix in tart apple dices and brown sugar.
  • Cook until apple dices are tender.
  • Stir in breadcrumbs; salt.
  • Thoroughly mix; leave to cool.
