Apricot Stuffing for Poultry
Servings: Enough to stuff a 4 to 5-pound [1.8 to 2.3-kg] poultry.
  • 1/2 pound [227 g] dried apricot halves
  • 2 cups [500 mL] breadcrumbs
  • 1/4 cup [60 mL] crushed crackers
  • 1 1/2 teaspoons [7.5 mL] salt
  • 1/4 teaspoon [1 mL] paprika
  • 4 tablespoons [60 mL] chopped celery
  • 1 tablespoon [15 mL] chopped parsley
  • 4 tablespoons [60 g] melted butter
  • Cold water
  • Rinse dried apricot halves.
  • Into a casserole, cover apricot halves with cold water.
  • Boil apricot halves until soft, drain then finely chop apricot halves.
  • Mix together breadcrumbs, crushed crackers, salt, paprika, chopped celery and chopped parsley.
  • Mix in melted butter, then chopped apricot halves.
  • Thoroughly mix.
