Perfect Stuffing for Fish
Comments: Stuff, then brush a whole fish with melted butter, before frying.

  • 1/4 cup [60 g] butter
  • 1/2 cup [125 mL] chopped onion
  • 1/4 cup [60 mL] chopped celery
  • 1/4 cup [60 mL] chopped sweet green pepper
  • 1/2 pound [227 g] boiled small shrimps
  • 1 teaspoon [5 mL] chopped parsley
  • 1 teaspoon [5 mL] chopped jarred sweet red pepper
  • 1 teaspoon [5 mL] Worcestershire sauce
  • 1/2 teaspoon [2.5 mL] paprika
  • 1/2 teaspoon [2.5 mL] old-fashioned bay leaf seasoning
  • 1/8 teaspoon [0.5 mL] Cayenne pepper
  • 1/4 teaspoon [1 mL] dry Sherry
  • 1 1/2 cups [375 mL] breadcrumbs
  • Salt, to taste
  • Melt butter into a saucepan.
  • Brown together chopped onion, celery and sweet green pepper.
  • Mix in shrimps, chopped parsley and sweet red pepper, Worcestershire sauce, paprika, old-fashioned bay leaf seasoning, Cayenne pepper and dry Sherry.
  • Salt.
  • Cook over low heat, for approximately 10 minutes.
  • Well mix in breadcrumbs; leave to cool completely.
