Old-Fashioned Apple Cake
Comments: Serve this cake along with whipped cream.

  • 1/4 cup [60 g] shortening
  • 1/2 cup [100 g] sugar
  • 1 egg
  • Few drops lemon juice
  • 1 1/2 teaspoons [7.5 mL] baking powder
  • Pinch of salt
  • 1 cup [140 g] all-purpose flour
  • 1/3 cup [80 mL] milk
  • 1/2 teaspoon [2.5 mL] vanilla
Filling
  • 2 apples
  • 1 tablespoon [15 g] butter
  • 1/4 cup [60 mL] packed brown sugar
  • 1 teaspoon [5 mL] cinnamon
  • Preheat oven to 350°F [180°C].
  • Beat together shortening and sugar, until light.
  • Beat in egg; then mix in lemon juice.
  • Sift together baking powder, salt and flour.
  • Mix together milk and vanilla.
  • Fold flour mixture into shortening mixture, alternately with already mixed milk and vanilla.
  • Pour into a round 8-inch [20-cm] cake pan.
  • Peel, core and thinly slice apples; evenly arrange apple slices on top of dough.
  • Evenly dot apple slices with butter.
  • Mix together brown sugar and cinnamon; sprinkle all over apple slices.
  • Bake into preheated oven, for approximately 25 minutes.
