Jam Cake
Comments: Strawberry jam is excellent.
Serving: 1 [9-inch / 23-cm] layered cake
  • 3 cups [420 g] all-purpose flour
  • 1 1/2 teaspoons [7.5 mL] cinnamon
  • 1 1/2 teaspoons [7.5 mL] allspice
  • 1 teaspoon [5 mL] ground clove
  • 1 cup [225 g] butter
  • 1 1/2 cups [300 g] sugar
  • 4 eggs
  • 1 teaspoon [5 mL] baking soda
  • 1 cup [250 mL] buttermilk
  • 1 cup [250 mL] jam
  • Preheat oven to 350°F [180°C].
  • Sift together flour, cinnamon, allspice and ground clove; set aside.
  • Cream together butter and sugar, until light and smooth.
  • Beat in eggs, one at a time, until well mixed in.
  • Dissolve baking soda into buttermilk; mix into butter/eggs mixture, alternately with flour mixture.
  • Fold in jam.
  • Pour into 2 greased and floured 9-inch [23-cm] round cake pans.
  • Bake into preheated oven, for approximately 30 minutes.
  • Check to see if center of cake bounces back under the pressure of a finger.
  • Cool onto racks.
