- 2 tablespoons [30 mL] icing sugar
- 1 cup [140 g] pastry flour
- 1/2 cup [115 g] shortening
- 1 1/4 cups [310 mL] brown sugar
- 1/2 cup [125 mL] coconut flakes
- 2 eggs
- 1 1/2 teaspoons [7.5 mL] baking powder
- 1/2 cup [125 mL] chopped nuts
- 2 tablespoons [17.5 g] flour
- 1/4 teaspoon [1 mL] salt

- Preheat oven to 350°F [180°C].
- Into a square 9-inch [23-cm] cake pan, mix together icing sugar, 1 cup [140 g] pastry flour and shortening.
- Bake into preheated oven, for 30 minutes.
- Meanwhile, beat together brown sugar, coconut flakes, eggs, baking powder, chopped nuts, 2 tablespoons [17.5 g] flour and salt.
- After 30 minutes baking time, spread coconut mixture over half-baked mixture.
- Bake for 30 minutes more.
