Nut and Coconut Squares
  • 2 tablespoons [30 mL] icing sugar
  • 1 cup [140 g] pastry flour
  • 1/2 cup [115 g] shortening
  • 1 1/4 cups [310 mL] brown sugar
  • 1/2 cup [125 mL] coconut flakes
  • 2 eggs
  • 1 1/2 teaspoons [7.5 mL] baking powder
  • 1/2 cup [125 mL] chopped nuts
  • 2 tablespoons [17.5 g] flour
  • 1/4 teaspoon [1 mL] salt
  • Preheat oven to 350°F [180°C].
  • Into a square 9-inch [23-cm] cake pan, mix together icing sugar, 1 cup [140 g] pastry flour and shortening.
  • Bake into preheated oven, for 30 minutes.
  • Meanwhile, beat together brown sugar, coconut flakes, eggs, baking powder, chopped nuts, 2 tablespoons [17.5 g] flour and salt.
  • After 30 minutes baking time, spread coconut mixture over half-baked mixture.
  • Bake for 30 minutes more.
