Commercial-Style Mayonnaise
  • 4 teaspoons [20 g] flour
  • 3 teaspoons [15 mL] oil
  • 3/4 cup [190 mL] hot water
  • 1/2 teaspoon [2.5 mL] paprika
  • 1/4 teaspoon [1 mL] mustard
  • 1/4 teaspoon [1 mL] pepper
  • 2 egg yolks or 1 whole egg, beaten
  • 2 cups [500 mL] oil
  • 3 tablespoons [45 mL] vinegar or other acid liquid
  • Heat together flour, 3 teaspoons [15 mL] oil and hot water for 5 minutes, stirring.
  • Stir in paprika, mustard, pepper and egg yolks or whole egg.
  • Alternately stir in remaining oil and vinegar or other acid liquid.
  • Refrigerate.
