Peppermint Pineapple Sauce
Comments: Serve this sauce cold, along with a roast of lamb.

  • 3/4 cup [190 mL] drained canned crushed pineapple [reserve juice]
  • 1/4 cup [60 mL] reserved pineapple juice
  • 1 cup [200 g] sugar
  • 3/4 cup [190 mL] water
  • 6 drops peppermint oil
  • Green food coloring, to taste
  • Into a medium-size casserole, bring together drained crushed pineapple, pineapple juice, sugar and water to a boil.
  • Simmer for 10 minutes over low heat, until thickened.
  • Leave to cool completely before stirring in peppermint oil and some green food coloring.
  • Cool, then refrigerate.
