- 3/4 cup [190 mL] drained canned crushed pineapple [reserve juice]
- 1/4 cup [60 mL] reserved pineapple juice
- 1 cup [200 g] sugar
- 3/4 cup [190 mL] water
- 6 drops peppermint oil
- Green food coloring, to taste

- Into a medium-size casserole, bring together drained crushed pineapple, pineapple juice, sugar and water to a boil.
- Simmer for 10 minutes over low heat, until thickened.
- Leave to cool completely before stirring in peppermint oil and some green food coloring.
- Cool, then refrigerate.
