Potato Cheese Salad
Comments: Serve this salad over crunchy lettuce leaves, garnished if desired with sweet pickles slices.

  • 1/2 cup [125 mL] mayonnaise
  • 1/4 cup [60 mL] sweet pickles juices
  • 2 cups [500 mL] cooled boiled potato dices
  • 2 hard-boiled eggs, grossly chopped
  • 1 teaspoon [5 mL] salt
  • 1/2 cup [125 mL] grossly chopped celery
  • 2 tablespoons [30 mL] chopped onion
  • 1 1/2 cups [375 mL] cheese dices
  • Thin mayonnaise with sweet pickles juices.
  • Stir in cooled potato dices, chopped hard-boiled eggs, salt, chopped celery, chopped onion and cheese dices.
  • Refrigerate until really cold, to well blend flavors.
