Oriental-Style Onion Salad
Comments: Excellent served along with a curry dish and a rice.
IngredientsPreparation
  • 1 large onion, peeled
  • 1 medium-size cucumber
  • 1 medium-size sweet green pepper, seeded and membranes removed
  • Juice of 1/2 a lemon
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 teaspoon [2.5 mL] freshly ground black pepper
  • 3 hard-boiled eggs
  • Thinly slice onion, cucumber and green pepper.
  • Mix together all vegetables slices into a salad bowl.
  • Stir in lemon juice; salt and pepper.
  • Half hard-boiled eggs; arrange over mixed lemony onion, cucumber and green pepper slices.
  • Refrigerate until ready to serve.
