- 1/2 cup [125 mL] pitted 'Royal Ann' cherries halves
- 1/2 cup [125 mL] pitted 'Bing' cherries
- 1/2 cup [125 mL] drained pear dices
- 1/2 cup [125 mL] drained peach dices
- 1/2 cup [125 mL] drained pineapple dices
- 1/2 cup [125 mL] reserved pineapple juice
- 1/2 cup [125 mL] mayonnaise
- 2 tablespoons [30 mL] icing sugar
- 1/4 teaspoon [1 mL] grated lemon rind
- 1 cup [250 mL] heavy cream, whipped
- 1/2 cup [125 mL] miniature marshmallows

- Mix together cherries halves, cherries and drained pear, peach and pineapple dices; reserve.
- Into a large glass bowl, mix together pineapple juice, mayonnaise, icing sugar and grated lemon rind.
- Delicately fold in whipped cream, miniature marshmallows and reserved drained fruits dices.
- Pour into a mold; freeze.
- Unmold to serve.
