Indian-Style Pudding
Comments: Serve this pudding hot, along with cream.
  • 4 cups [1 L] milk
  • 1/2 cup [125 mL] yellow cornflour
  • 1/4 cup [60 g] sugar
  • 1 teaspoon [5 mL] salt
  • 1 teaspoon [5 mL] cinnamon
  • 1/2 teaspoon [2.5 mL] ginger
  • 1 egg
  • 1/2 cup [125 mL] molasses
  • 2 tablespoons [30 g] butter
  • Preheat oven to 300°F [150°C].
  • Into the top part of a double boiler, bring 3 cups [750 mL] milk to a boil; remove from heat.
  • Stirring at all times, stir in yellow cornflour, sugar, salt, cinnamon and ginger; set aside.
  • Thoroughly beat together egg and molasses.
  • Vigourously beat approximately 3 teaspoons [15 mL] hot mixture into well beaten egg/molasses mixture.
  • Stir into cornflour mixture, into top part of double boiler.
  • Cook, stirring over boiling water for approximately 10 minutes, until thickened.
  • Beat in butter; pour into a well buttered oven-safe mold.
  • Bake into preheated oven for approximately 2 hours, until golden.
