Roasted Sweet Red Pepper Olive Bruschetta Bites [+ oven broiler]

  • 1/2 cup [125 mL] oil
  • 2 cloves garlic, minced
  • 1 French bread stick, into 1/2-inch [1.3-cm] thick slices
  • 3 roasted sweet red peppers, rinsed and dried
  • 1/4 cup [60 mL] stoned ripe or green olive slices
  • 2 tablespoons [30 mL] freshly chopped parsley
  • 1 teaspoon [5 mL] anchovy paste [optional]
  • Salt and pepper, to taste
  • Preheat oven broiler.
  • Into a microwave-safe bowl, mix together oil and minced garlic.
  • Microwave on 'MAXIMUM' for 1 minute, until a nice scent can be smelled.
  • Arrange French bread slices onto a baking sheet.
  • Reserve 1 tablespoon [15 mL] oil/garlic mixture.
  • Brush one side of each slice of bread with remaining oil/garlic mixture.
  • Broil slices under preheated broiler for 1 minute, until golden brown; turn bread slices over and brown on other side.
  • Thinly slice roasted sweet red peppers into strips; mix together with ripe or green olive slices, chopped parsley, anchovy paste [if desired], salt, pepper and remaining oil/garlic mixture.
  • Evenly spread bread slices with mixture.
  • Broil slices under preheated broiler, until hot.
