Roasted Pepper, Olive Bruschetta [+ regular oven]

  • 1/2 cup [125 mL] oil
  • 2 garlic cloves, minced
  • 1 French bread stick, sliced [1/2-inch / 1.3-cm thick]
  • 3 roasted peppers, rinsed and dried
  • 1/4 cup [60 mL] stoned olives, ripe or green, sliced
  • 2 tablespoons [30 mL] freshly chopped parsley
  • 1 teaspoon [5 mL] anchovy paste [optional]
  • Salt and pepper to taste
  • Heat oven broiler.
  • In a microwave-safe bowl, mix together oil and minced garlic.
  • Microwave on 'HIGH' for 1 minute, until you can smell a nice scent.
  • Arrange bread slices onto a baking sheet.
  • Reserve 1 tablespoon [15 mL] oil/garlic mixture.
  • Brush one side of each slice of bread with remaining oil/garlic mixture.
  • Broil slices for 1 minute, until golden brown; turn bread slices and brown on other side.
  • Thinly slice roasted peppers into strips; mix together with olive slices, chopped parsley, anchovy paste [if desired], salt, pepper and remaining oil/garlic mixture.
  • Evenly spread bread slices with mixture.
  • Broil until hot.
