Georgia-Style Crabmeat Bites

  • 6 ounces [190 mL] shredded crabmeat
  • 1 cup [250 mL] mayonnaise
  • 1/2 teaspoon [2.5 mL] lemon juice
  • 1/4 cup [60 mL] minced 'Vidalia' [sweet] onion
  • 1 egg white
  • Round crackers
  • In a small bowl, mix together crabmeat and mayonnaise; stir in lemon juice.
  • Mix in minced onion.
  • Whip egg white until stiff, but not dry, peaks form.
  • Fold crabmeat mixture into whipped egg white.
  • Spoon approximately 1 teaspoon [5 mL] mixture onto each cracker.
  • Microwave for 45 to 60 seconds on 'HIGH', until really hot.
  • Serve immediately.
