- 6 ounces [190 mL] shredded crabmeat
- 1 cup [250 mL] mayonnaise
- 1/2 teaspoon [2.5 mL] lemon juice
- 1/4 cup [60 mL] minced 'Vidalia' [sweet] onion
- 1 egg white
- Round crackers

- In a small bowl, mix together crabmeat and mayonnaise; stir in lemon juice.
- Mix in minced onion.
- Whip egg white until stiff, but not dry, peaks form.
- Fold crabmeat mixture into whipped egg white.
- Spoon approximately 1 teaspoon [5 mL] mixture onto each cracker.
- Microwave for 45 to 60 seconds on 'HIGH', until really hot.
- Serve immediately.
