Cheese Scones

A scone is a small bread, American biscuit like tea cake.
Servings: 6 or 7 scones

  • 1 3/4 cups [440 mL] whole wheat pastry flour
  • Pinch of salt
  • 2 tablespoons [30 mL] margarine
  • 2 ounces [57 g] grated Edam cheese
  • 5 to 7 tablespoons [75 to 105 mL] skim milk
  • Tomato slices [optional]
  • Margarine [optional]
  • Any desired low-salt spread [optional]
  • Mix together flour and salt; mix in margarine, until crumbly.
  • Mix in grated cheese and milk.
  • Lightly knead dough; flatten into a 1/2-inch [1.3-cm] thick disc.
  • Cut dough into 3-inch [7.5-cm] circles.
  • Arrange dough circles onto a platter; microwave for 3 to 4 minutes, turning platter at half time.
  • Leave to rest for 2 minutes; cool onto a wire rack.
  • Open-up scones.
  • Serve scones topped with tomato slices, or spread with margarine and then with any low-salt spread.
