- 6 slices bacon
- 1 medium-size onion, finely chopped
- 1/2 pound [227 g] thinly sliced fresh mushrooms
- 1/4 teaspoon [1 mL] tarragon
- Salt and pepper, to taste
- 2 buttered toasts

- Microwave bacon slices, onto a square 8-inch [20-cm] microwave-safe plate, for 6 to minutes, on 'HIGH'; reserve 2 tablespoons [30 mL] melted fat.
- Transfer bacon slices onto paper toweling and leave to cool before crumbling; reserve.
- Mix together reserved bacon fat and chopped onion.
- Microwave on 'HIGH' for 4 to 5 minutes stirring once, until just softened.
- Well mix in mushroom slices; stir in tarragon.
- Microwave for 2 minutes, on 'HIGH'.
- Mix in reserved drained bacon crumbs; microwave for 1 minute, on 'MEDIUM-HIGH'.
- Half or cut each buttered toast into four pieces.
- Cover each piece with mushroom mixture, and serve.
